On-The-Go Savory Trail Pancakes
Who has time to sit down, eat, and clean dishes when you have an adventure to get started? Our “Pack Cake” Pancakes are a hearty breakfast made for people on the go.
Grab and go breakfast pancakes
Kick-start your action packed day with a convenient meal. Pancakes are an easy to make, easy to customize breakfast that you can prep ahead of time and store in a pack or cooler. Make pancakes at home or at your campsite and include your favorite meats, cheeses, fruits and nuts for a personalized grab and go breakfast. Follow the ‘base recipe’ below and add your favorite flavor boosts, such as:
- seasonal fruit
- local staples
- leftover meat from a bbq
- foraged herbs
- peanut butter
- chia or hemp seeds

- 1 cup Whole Wheat Buttermilk Pancake Mix
- 2 tbsp Chia Seeds
- 1 tsp Cinnamon
- 1 Egg
- 1 tbsp Coconut Oil
- 2 tbsp Maple Syrup
- 3/4 cup Cold Milk
- 1 Ripe Banana smashed
- 1/4 cup Fresh Berries (raspberries, blueberries, blackberries...)
- 1 tbsp Orange Zest
- 2 tbsp Walnuts chopped
- 1/2 cup bacon chopped

Beat egg until fluffy in a large mixing bowl

Add coconut oil and milk to egg and .

Add and mix well.

Add banana, berries, zest, walnuts and bacon and mix well.

Pre-heat pancake griddle or stovetop pan.

Spray griddle with non-stick spray.

The pan is hot enough when a drop of water breaks into several smaller balls which ‘dance’ around the pan.

Pour a small amount of batter (approx 1/4 cup) onto griddle, leave several inches of space in-between each Pack Cake

When bubbles appear on surface and begin to break, turn over and cook the other side.

When the Pack Cakes are finished, let them cool on a plate until they are room temperature.

Store Pack cakes in refrigerator or freezer in a ziplock bag or container until you're ready to hit the trail.
